Burrata Pasta with Roasted Tomatoes & Prosciutto

The most delicious pasta, just in time for warmer weather! It's creamy, it's salty, it's tangy, it's truly PERFECT. You could pair this with a glass of white wine, have dinner on the back porch and that my friends, would be the perfect evening. I hope you enjoy this recipe!

Ingredients
  

  • 6 oz pasta, cooked al dente
  • 3/4 cup cherry tomatoes, halved
  • 1 TBSP olive oil
  • 1-2 TBSP fresh basil, finely chopped
  • 1 cup heavy cream
  • 2 TBSP butter
  • 1 tsp minced garlic
  • 2 tsp lemon juice
  • 1/4 cup dry white wine
  • pinch of red pepper flakes
  • 4 pieces of prosciutto
  • 2 balls of BelGioioso Cheese burrata

Instructions
 

To Make:

  • Preheat oven to 400° — toss cherry tomatoes in a little olive oil & salt and pepper. Roast tomatoes for 15-20 minutes, or until they start to soften..
  • In a sauté pan, warm the prosciutto for just a few minutes, until it gets crispy. Remove the prosciutto from the pan.
  • In that same pan, melt the butter & add the garlic and lemon juice and let cook for 1-2 minutes, add the wine and let simmer for 3-4 minutes.
  • Add the heavy cream, red pepper flakes, salt & pepper and let simmer until the sauce starts to thicken then add the pasta.
  • Top with prosciutto, an open piece of burrata cheese & fresh cracked black pepper.
  • This pairs perfectly with a warm baguette & a glass of Pinot Grigio!

Salted Caramel Carrot Cake — YUM

SALTED CARAMEL CARROT CAKE

My tried and true recipe, and the most delicious carrot cake you will ever have!!! I hope you enjoy!

Ingredients
  

CARROT CAKE

  • 2 cups flour
  • 2 cups sugar
  • 1 1/2 tsp baking soda
  • 1 TBSP pumpkin pie spice
  • 1 tsp salt
  • 4 eggs
  • 2 TBSP vanilla extract
  • 1 1/2 cups oil
  • 2 cups carrots, finely shredded
  • 1 cup crushed pineapple, drained
  • 1/2 cup pecans, chopped
  • 1/2 cup shredded coconut

CREAM CHEESE FROSTING

  • 2 sticks butter, softened
  • 2 blocks cream cheese, softened
  • 1 TBSP vanilla extract
  • 4 cups powdered sugar

Instructions
 

CAKE

  • Preheat oven to 325 degrees. In a mixing bowl, add eggs, oil, & vanilla extract and mix until combined. Next, add your flour, baking soda, salt & pumpkin pie spice and mix until the batter starts to form. Lastly, add your carrots, pineapple, coconut and pecans. Mix just until combined being careful not to over mix. Divide batter equally into 3 cake pans that have been sprayed with nonstick spray.
    Bake until a toothpick comes out crummy, but not clean. That is how you know your cake will be moist!!! They will continue to cook as they start to cool.

FROSTING

  • For your cream cheese frosting, in a mixing bowl add your butter and powdered sugar. Mix for a couple of minutes until the frosting has started to form. Add your cream cheese and vanilla extract next. Turn your mixer on high until you have the most beautiful cream cheese frosting.

ASSEMBLY

  • Once cake layers have completely cooled, start to layer with your cream cheese icing. Top with caramel and flaky sea salt. ENJOY!!!

If you can't make it to the course, grab these ingredients and make a Bloody Mary while watching the tournament on the big screen! I hope you enjoy!

Ingredients
  

  • 8 oz Durty Gurl Habanero Bloody Mary Mix
  • 3 oz Second City Distilling Co. Vodka
  • Durty Gurl Bloody Mary Rimmer
  • Cheese & Charcuterie Skewers (I used Cabot Pepper Jack Cheese & Spicy Salami)
  • 1 stalk Celery
  • Mt. Olive Pickles
  • Mezzetta Olives & Peppers
  • **I also add my homemade candied bacon if I can

Instructions
 

HOW TO MAKE THE ULTIMATE BLOODY MARY --

  • In a mason jar, add your Bloody Mary Mix and Vodka over ice. SHAKE SHAKE SHAKE until your arms feel like they may fall off, literally!
    In a new mason jar, dip the rim into Durty Gurl Bloody Mary Rimmer -- Fill with ice & pour in the shaken mixture.
    Top with all the toppings. This is basically a snack... The more the better!!!

The best chicken salad!

This is such an easy recipe & great all times of the year. It is perfect for gatherings, bridal showers, baby showers & more! I love the sweetness of the cranberries and the spiciness of the pickled jalapenos. The best combo!

  • 2 cups of cooked chicken breast, shredded
  • 1/2 cup Duke’s mayo
  • salt & pepper to taste
  • 3 TBSP ranch
  • 1/4-1/2 tsp sugar 
  • 1/4 cup finely chopped celery 
  • 1/4 cup finely chopped dried cranberries 
  • 1/4 cup finely chopped pecans
  • 1/4 cup finely chopped pickled jalapeños (optional)

In a bowl, combine all ingredients until completely mixed. Best paired with your favorite crackers, on a toasted croissant or straight out of the bowl!

the sweetest lucky charm sprinkle bars

“Luck is believing you’re LUCKY.”

These Lucky Charms Sprinkle Bars are SO easy & are a fun twist on my all time fav, Rice Krispie Treats!

First, line a square baking dish with parchment paper and set to the side.

In a saucepan, melt the butter and add in all but about one cup of the mini marshmallows. Keep stirring on low until the marshmallows are melted. Remove the pan from heat and add in the remaining marshmallows & cereal.

Pour into the lined baking dish and top with extra Lucky Charms marshmallows & lots of SPRINKLES and a pinch of sea salt!

NATIONAL PECAN MONTH IS COMING UP!

Next week is National Agriculture Week and National Pecan Month starts in April! I visited my friends at The Pecan Barn again recently and got some goodies! Not much is better than a fresh GA pecan and that’s exactly what these are. Straight from the farm, out of the shell and then to you — That’s as good as it gets y’all!!!

The Pecan Barn is located in Blythe, GA and is a family owned & operated business. With a variety of items to choose from, they have fresh pecans, praline pecans, glazed & chocolate covered, just to name a few! They also have blueberry or maple pecan syrup (delicious on waffles) along with locally made jams, pecan oil and their newest item pecan clusters which is fresh pecans covered in caramel & chocolate — they are AMAZING!

These make great gifts for friends & family that may not be local, corporate gifts, for your office staff and even closing gifts for all you realtors! They also ship all over the United States. With Masters right around the corner, these would be perfect in gift baskets for your guests. What a great way to say WELCOME TO AUGUSTA, GEORGIA!

My favorite place to be!

My kitchen is my absolute favorite place to be. I love to use my creativity to develop and test recipes. Whether it’s baking a cake, testing a new recipe or just a good ‘ole casserole for some pure comfort food, I am ready to make it all!

Of course there are so many items I have in my kitchen that I feel are “must haves” if you like to be in the kitchen too. Quality is SO important when it comes to kitchen tools. For example, you could purchase a low-priced mixer today and then end up having to replace it in a couple of years or you could really invest in a high quality, top of the line mixer and it lasts you 20+ years.

Your most important tool in the kitchen is a good quality chef’s knife. Trust me, they are worth the investment! There is nothing more unsafe in a kitchen than a dull knife. My favorite chef’s knife that I use for everything is the Zwilling 7″ Santoko Knife. I highly recommend going somewhere that will allow you to hold the knife to see which is the most comfortable fit for you. My favorite shop is Smoky Mountain Knife Works in Sevierville, TN.

My next 2 favorite small appliances are my Kitchen Aid Mixer and my Nespresso Machine. Cake & coffee — AM I RIGHT OR AM I RIGHT?! I use my Kitchen Aid for everything from cakes, cookies, mixing casseroles and shredding chicken — the possibilities are endless! Now, my Nespresso machine is pure GOLD! I use it every single day, whether it’s a warm cup of coffee in the mornings or an iced latte in the afternoons. The frother is a must!!! You will never want to go to a chain coffee shop every again! I’ve posted quite a few recipes on my Facebook & Instagram pages if you would like to check them out.

Lastly, there are 2 small items but I feel like they are very important as well! My recipe box is filled with recipes that are 70+ years old down to recipes that I have created with my own 2 hands. I have collected family recipes over the years and have held on to them as a treasure. There is such a variety in that box and it makes my heart so happy. The next item is clear spice jars with labels. When we moved, I made a point to go through my spice cabinet and switch over to these clear jars. Not only are they aesthetic, but it is also so easy to tell when you are low on your spices. Keeping a fully stocked, organized spice drawer/cabinet is the secret to a good dish!

Christie’s Coffee Co. is now OPEN! I have known Joseph & Lisa Christie for 16+ years now!! They are some of the most genuine, loving people I know. They would do anything for anyone along with giving so much to our community. You may recognize them as they are also the owners of the local Pelican SnoBalls!

Joseph was my youth group worship leader at church when I was in middle school, which seems like so long ago! It seems like life gets busier & busier and at times it’s hard to stay in touch. Lisa & I reconnected through Real Estate 2 years ago and I am so thankful we did! She is a former Respiratory Therapist at CMC and now a local real estate agent with Summer House Realty — also known as Home Sweet Augusta on social media!

The best Indian Food in the CSRA…

Namaste Indian Street Food has your classic & favorite Indian dishes, with their own little twist that makes them absolutely amazing! The word “namaste” actually means, “I bow to you” which is used as a respectful greeting in India.

When some think of Indian food, they think that the food is very spicy and strong, but not at Namaste. The owner, Manoj creates the most flavorful and beautiful dishes topped with edible flowers and garnishes. You will notice something extra special if you visit their website — all of the dishes list whether they are spicy, dairy free, gluten free, but free, etc.

There is truly something for everyone at Namaste. My favorite dishes are the garlicky cauliflower, the butter chicken and of course the garlic naan. Let me just tell you, the garlicky cauliflower is unlike anything I have ever tasted! I crave it ALL THE TIME! So next time you go, make sure you give it a try!
