Filling — 1 cup of whipped cream cheese & 1 cup blueberry jam
To make the filling, mix together the cream cheese and jam — set aside. Next, make a pocket in the bottom of each slice of bread, carefully not cutting all of the way through. Fill with approx. 2-3 TBSP of filling. It’s a little messy, but so worth it! Get a skillet nice and warm with butter while you make the egg mixture. In a bowl, whisk the eggs, milk, cream, sugar and cinnamon. Dip the stuffed bread into the egg mixture and brown on each side. It smells heavenly! Serve with a drizzle of quality maple syrup, fresh berries & sliced banana — ENJOY!

Gatlinburg, TN is definitely a spot where my husband and I love to travel to. We have been during all seasons and there is truly not a bad time to go. We got married up there almost 4 years ago during Christmas time in the snow and it was an absolute DREAM. I wish I could relive that day over and over.
While we are up there we love visiting our favorite restaurants while also trying some of the new ones as well. We will tour Gatlinburg but also venture to Pigeon Forge and Sevierville as well. Some of our favorite restaurants are The Apple Barn, The Old Mill, Loco Burro and The Donut Friar — because you must have donuts on vacation, right?
We also love going to all of the antiques stores up there… more to come on this topic later! If you like to go sight seeing, be sure to check out Cades Cove, Clingman’s Dome, The Sky Lift or some of the trails. It is such a beautiful city and there is always so much to do.

3 cups of brussels sprouts, with the leaves taken off — blanched
1.5 cups raw brussel sprouts, sliced thin (I used the center part of the ones I took the leaves off)
dried cranberries
mandarin oranges
bacon pieces
SALAD DRESSING
sliced apple
1/3 cup olive oil
2 TBSP maple syrup
1.5 TBSP lemon juice
2 tsp dijon mustard
2 TBSP apple cider vinegar
1 small garlic clove, minced
salt + pepper
red pepper flakes
Let’s make the dressing —> in a mason jar combine olive oil, maple syrup, lemon juice, Dijon mustard, spices & minced garlic. Put the lid on and shake to blend everything together. To make the salad, blanch the brussels sprouts —> put the leaves in simmering water for 45 seconds, and then strain and put them in ice water. The color will be BEAUTIFUL! Next dry them off and add to a bowl. Top with sliced brussels sprouts, cranberries, oranges, apple slices and bacon — anything would be good in this salad — strawberries, raspberries, blackberries. Add the dressing & toss everything together. Top with shaved fresh parm, cracked black pepper & red pepper flakes.
